I love a good salsa and it’s hard to find in restaurants. My hubby and I joke that in order to pass our test and come back to a Mexican restaurant they have to have A. good salsa B. good margarita C. good fajitas. I think if you fail the first two for sure you should close up shop. Just kidding, I know I’m just one customer out of the thousands that go so just because I’m not happy doesn’t mean everyone else isn’t.

This recipe comes from an unnamed source because I can’t tell you who they are. I like the addition of carrot in there to give it a little crunch. For some reason I like mine blended until it’s water with a tiny hint of cilantro, but the hubby likes it chunky with tons of cilantro so it’s a good thing I make my own and and customise it.

Fresh Salsa

4 jalapenos
1 clove garlic
4 green onions
1 tomatillo
cilantro to taste
1 small carrot
1 can whole tomatos
salt to taste

Place all ingredients in a blender and pulse to desired consistancy. (I strain the canned tomatoes and add the juice as needed.)
