Our family loves queso especially my son. We thought it would be fun to elevate our normal Velveeta with salsa to something more like a restaurant would serve. The result was a lovely stringy cheese that was soooo good! Trust me this won’t disappoint.

Chorizo dip queso fundido
(Adapted from Oh Sweet Basil)

1 cup shredded mozzarella
1 cup shredded queso quesadilla cheese or oaxaca
1 clove garlic, minced
8 ounces chorizo
tortilla chips for dipping

Heat the oven to broil.

In a medium skillet over medium heat, add the chorizo and garlic and cook through, about 5 minutes.

Drain and set aside.

In a cast iron skillet (small) or ceramic dish, add the cheese and broil until melted.

Top with drained chorizo and serve immediately with chips.

If you cannot find oaxaca or queso quesadilla just use Monterrey jack cheese
