If you are looking for a uniquely flavored mashed potatoes this year, I highly recommend these blue cheese ones! They are elegant and pack a punch making it a winner at your table over boring plain ones. They work great for a simple steak night too, not to mention quick and easy to make!
Blue Cheese Mashed Potatoes
(Adapted from Olivia’s Cuisine)
4 large Russet potatoes (about 2½ lbs), peeled and quartered
6 tablespoons butter
1 cup heavy cream
6oz blue cheese, crumbled (Use Gorgonzola cheese for a milder flavor!)
Cook potatoes in salted boiling water until tender, about 15 minutes.
Drain the potatoes and pass through a potato ricer back into the pan (or use a potato masher if you like your mashed potatoes chunkier!).
Stir in the butter, cheese, heavy cream, salt and pepper and cook for a minute or until everything is incorporated. Taste for seasoning and adjust accordingly.
Garnish with chopped chives (and some more crumbled blue cheese, if you’re bold!) and serve!
