I have to say I wasn’t sure how this would come out, but I’m hooked! The bread comes out nice and light. While I think it taste better toasted, it does hold up as a normal bread use.
90 Second Keto English Muffin (in a mug)
(Adapted from DIY The Rainbows)
3 tablespoons almond flour
1 ½ tablespoons melted butter
½ teaspoon baking powder
1 egg white
Mix in a mug, then microwave 90 seconds.
Cut in half, and toast if desired.
