I like having lemon balance out the sweetness in desserts so this just seemed like a great combo. For French Toast I really like using a good brioche bread, I feel like a thick slice of bread works best without getting too soggy and flat. The glaze would be great on pancakes or waffles as well. I also like putting it on a slice of toast.

Lemon Poppy Seed French Toast

French Toast:
4 slices brioche bread
Zest of 1 lemon
2 eggs
¼ teaspoon poppy seeds

Glaze:
1 cup powdered sugar
1-2 tablespoons lemon juice
¼ teaspoon poppy seeds

Combine lemon zest, eggs and poppy seeds. Dip brioche bread in egg wash and pan fry each side until golden brown.

Combine glaze ingredients and drizzle over cooked French toast.
