This was an amazing Summer salad to serve up on these hot days! I left out the fresh basil since mine had gone bad and it was still delish!
Blueberry Corn Feta Salad
(Adapted from Recipe Runner)
1 1/2 cups fresh or frozen (defrosted) corn
1 1/2 cups fresh blueberries
1/4 cup sliced green onions
1 jalapeño, seeded and minced
1/3 cup crumbled feta cheese
2 tablespoons chopped fresh basil
3 tablespoons fresh lime juice
1 1/2 tablespoons olive oil
1 tablespoon honey
1/2 teaspoon chili powder
Kosher salt and fresh ground black pepper to taste
In a large serving bowl combine the corn, blueberries, green onion, jalapeño, feta and basil.

In a small bowl whisk together the lime juice, honey, olive oil, chili powder, salt and pepper.

Pour the dressing over the salad and stir together until combined. Taste for seasoning then serve or cover and refrigerate until ready to serve. The salad will last up to 3 days in the refrigerator, but is best the day it’s made.
