Appetizers are one of the things I love to make. They help keep you from getting too hungry while waiting for dinner and honestly sometimes are so filling we do a couple appetizers as our dinner. These 2 are quick and easy to make and semi homemade. I got the phyllo pastry cups from the freezer section. You don’t have to do anything just defrost them and fill them for appetizers or use them for desserts.

For the first one I just made a quick mixture of diced tomatoes, red pepper flakes, olive oil, basil, diced mozzarella and then after I filled the cups I drizzled with a little balsamic vinegar reduction and minced basil.

For the 2nd one I added a slice of brie in the bottom then put them under the broiler until the cheese melted.

Once melted I topped with a spoonful of fig jam and then a little slice of prosciutto.

Now you have 2 quick and easy appetizers ready for unexpected company or last minute entertaining.
