One salad that is always a hit in my house is Caesar. I love a good homemade dressing and when I saw this one I had to try it. My boys are not a huge cauliflower fan on it’s on, but sneaking it into the dressing I figured it would be a hit. They did notice it was a little on the thick side and tasted like Caesar, but they knew something was different. Honestly it’s worth a shot and I think almost better as a dip. If I could make it a little thinner I don’t think they would have noticed.

Caesar Dressing

3/4 cup cauliflower puree
1/4 cup grated parmesan
Juice of 1 large lemon (about 2 tablespoons)
2 tablespoons water
1 tablespoon olive oil
1/4 teaspoon salt
1 clove garlic, finely minced
1/2 teaspoon low-sodium Worcestershire sauce
1/2 teaspoon hot sauce (such as Tabasco)
1/4 teaspoon pepper

Place all the ingredients in a mini-chopper and blend until smooth. Store in an airtight container, refrigerated, 4 to 5 days.
