HAPPY NEW YEAR!!! I can’t tell you how much I’m excited to start this year off. I’m going with 202won!! Last year wasn’t the worst for us, I won volunteer of the year for our PTA, made it on Food Network except covid delayed the filming so that’s on the back burner, took on new roles at school, my son shot his first deer. I do have a mixture of goals for 2021, it’s important to not just make a goal to say you did it, but to make it like a vision board so good things build upon it. I’m taking more of a backseat on some things to focus on personal issues. I still want to explore new foods and expand my knowledge learning more about video editing. I have a couple things up my sleeve for this year so I’m keeping a positive outlook! Cheers to everyone and let’s spin the negative into a positive.

These potatoes where a huge hit with us. Sometimes a simple approach and flavors turn into a bigger influence. Did you get an air fryer for Christmas? We love ours and I use it a lot. More people I find don’t care for them because fried cheese sticks and fries just are ehh. My secret is using it for items you don’t normally think of “frying”. Trust me you’ll love your machine more if you use it for more things than just fries! You could also roast these in the oven if you don’t have an air fryer.

Airfryer Baby Potatoes
(Adapted from Everyday Family Cooking)

1 pound baby potatoes
2 tablespoons butter, melted
1/2 teaspoon oregano
1/4 teaspoon sea salt

Preheat air fryer to 400 degrees.

Combine whole baby potatoes, melted butter, oregano, and sea salt in a bowl.

Add baby potatoes to the air fryer and cook for 14-16 minutes until tender when pierced with a fork. Shake basket halfway through.

Carefully remove potatoes from the air fryer and enjoy immediately.
