I’m slowly getting back into recipe contest mode and created 2 recipes for an applesauce contest. The results are in and while I didn’t get picked, I think they are both winners. This has a nice caramel and apple flavor without being too sweet or over the top.
Caramel Applesauce Cannoli
(Created by Finding Inspiration in Food)
6 pre-made cannoli shells
½ cup honey roasted peanuts, crushed
8 ounces mascarpone
2 cups confectioners’ sugar, plus more as needed to thicken and to garnish
½ cup Simply Wholesome Foods Touch of Honey with Cinnamon Applesauce
Dip ends of cannoli shells into caramel. Dip caramel covered ends into crushed nuts. Set aside.
Place mascarpone and confectioner sugar in a bowl of an electric mixer fitted with a paddle attachment; beat until smooth.
Add in applesauce and beat until combined. Extra confectioners’ sugar may be added to desired thickness.
Pipe filling into both ends of cookies. Refrigerate in an airtight container until ready to be eaten.
Dust with confectioners’ sugar for garnish.
