Another weekend has flown by! Where does all the time go? Temps where set for 100 degrees F this past weekend and boy was it hot! I don’t know what they did back in the old days with no AC and no shelter besides a horse and wagon.

I love ordering the William Sonoma catalog, they feature some good recipes in there as long as items I cut out to add to my wish list for Santa hehe. I decided to make this recipe as something different for my hubby instead of our usually weekend splurge of food. I also made it on the weekend because it has some booze in it it and didn’t want to have to send him to work all liquored up. 🙂 To be honest it was really good, but a little too sweet for breakfast. I will make this again for sure just use it as a topping on ice cream or on a cake.

Waffles with Maple-Glazed Bananas
(Adapted from William Sonoma Kitchen)

6 tablespoons (3/4 stick) unsalted butter
3/4 cup maple syrup
3/4 teaspoon ground cinnamon
1/4 cup dark rum (optional)
1 teaspoon vanilla bean paste or extract
4 bananas, peeled and cut diagonally into slices 1/2″ thick
4 large waffles
sweetened whipped cream for serving

In a large saute pan over medium heat, melt butter with maple syrup.

Stir in cinnamon, rum and vanilla; simmer 1 minute.

Add bananas to pan; cook 2-3 minutes. Using slotted spoon, transfer bananas to serving plate. Pour maple syrup mixture into sauceboat. Serve immediately with waffles and whipped cream.
