Hope everyone had a wonderful and safe New Years Eve! 2024 has been a struggle for me and I’m ready to take 2025 by the horns and take the control back. I know everyone likes to kick off the year with a healthier lifestyle so let’s get healthy without giving up all the sweets! These brownies came out more like a cake consistency for me, but either way, I have to say they tasted pretty darn good! I haven’t had a chance to blend cottage cheese so I was a little iffy as to how that would come out, but I love being able to experiment and was really shocked at how creamy it came out. The taste slightly changes like a cream cheese constancy so I see the lure into blending it.

Cottage Cheese Protein Brownies

1 cup cottage cheese
1/2 cup protein powder use your favorite flavor
4 large eggs room temperature
2/3 cup unsweetened cocoa powder
1/4 cup coconut oil melted
1/2 cup coconut flour
3/4 cup sweetener your preferred sweetener
1 tsp vanilla extract
1 tsp baking powder
1/4 cup chocolate chips or chopped dark chocolate

Preheat your oven to 350°F (180°C). Line a 9×9 inch square baking pan with parchment paper or grease it well. Set aside.

Add the cottage cheese to a blender or food processor and process until smooth. Scrape down the sides as needed to ensure all the cottage cheese is creamy and smooth.

To the blended cottage cheese, add the 4 large eggs, melted coconut oil, and vanilla extract. Blend or process until well combined.

Add the protein powder, unsweetened cocoa powder, coconut flour, sweetener, and baking powder to the blender or food processor with the wet ingredients. Blend until a smooth batter forms, scraping down the sides if necessary.

Pour the batter into the prepared baking pan, spreading it out evenly with a spatula.

Sprinkle the chocolate chips or chopped dark chocolate evenly over the top of the batter.

Bake in the preheated oven for 20-22 minutes, or until the top looks set and is firm to the touch.
A toothpick inserted into the center should come out with a few moist crumbs, but not wet batter.

Allow the brownies to cool completely in the pan before cutting into squares. Enjoy!
