Summer is close to an end. I’m excited for the new school year, but sad we missed out on half a summer dealing with the passing of my mother in law. Time to sit back and enjoy a refreshing cocktail! I honestly loved this drink. It’s perfect for a hot day and I think it would be great blended or on the rocks!
Coconut Mai Tai
(Adapted from Restless Chipotle)
2 ounces spiced rum
1 ½ ounce coconut rum
1 ounce cream of coconut
2 ounces orange juice
2 ounces pineapple juice
1 teaspoon grenadine
1 Maraschino cherry
Ice
Add all of the ingredients except the cherry to a shaker with ice.
Shake until well blended.
Strain into a glass.
Add the cherry and ice if desired.
