Valentine’s Day is coming up and these cute little mini pies would make a perfect dessert. I was cleaning out the freezer and saw I had some frozen cherries. I honestly LOVED the pie filling! It’s great on it’s own, but then I finally found the mini pie crust at the store. Since they are the same price as the full pie crust I gave it a shot. They are pretty neat I have to say. I felt like I didn’t waste any dough as if I would if I just cute them out myself. I used the scrap dough and was able to squeeze out one more pie shell. Overall I recommend them!

Homemade Cherry Pie Filling
(Adapted from Savor with Jennifer)

Printer Friendly Version

2 pounds frozen sweet cherries
3/4 cup sugar
1/4 teaspoon almond extract
1/4 teaspoon vanilla
1 tablespoon fresh lemon juice
3 tablespoons cornstarch

Stir together all ingredients in a medium sized saucepan.

Bring to a gentle simmer over a medium-low heat. Simmer for 5 minutes.

Cool to room temperature and use in your favorite recipe.
