With the busiest month upon us its time to get back into those quick meals. This one has coffee too so it’ll give you that extra boost! Just kidding! I used up some leftover meat to make tamale bites in the instapot and those where a huge hit! Recipe coming soon.

Coffee Rubbed Pulled Pork
(Adapted from The Family-Friendly Keto Instant Pot Cookbook by Anna Hunley)

2 tablespoons ground coffee
2 tablespoons brown sugar substitute
2 tablespoons chili powder
1 tablespoon salt
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon smoked paprika
2 teaspoons garlic powder
2 teaspoons ground mustard
4 to 5 pounds pork shoulder (Boston Butt)
1 cup beef broth

Prepare the rub by combining the coffee, brown sugar substitute, and all the spices in the bowl. Use a fork to mix them together until well combined.

Pat the meat dry with a paper towel so the rub will adhere to it. If your meat is too large to fit in your Instant Pot, cut it into two or three pieces.

Coat every side of the meat with the rub. Be liberal with the rub and massage it into the meat. Don’t be afraid to get your hands dirty! Be sure to use ALL the rub.

Pour the broth into the pot. Place the meat into the pot.

Close the lid and seal the vent. Cook on HIGH pressure for 90 minutes. Quick release the steam.

Remove the meat from the pot and place it on a cutting board. Shred the meat with two forks. It should fall apart very easily.

Optional: Strain the juices in the pot and save for dipping the meat into. You can also save some of the juices for pouring on top of leftover meat to keep it moist in the refrigerator.
