Here’s a retro recipe for you. I honestly don’t know if I’ve ever had a Salisbury steak. I’ve never been one to buy tv dinners and I know that’s offered in there a lot. I have to say after making it I think I’m good at not having another one lol. It’s like a meatloaf topped with sauce. The sauce was really good and I might make it again to top chicken with, but other than that I might pass on the Salisbury steaks, they are not for me.
(Adapted from The Family Friendly Keto Instant Pot Cookbook by Anna Hunley)
1 pound ground beef
4 teaspoons Worcestershire sauce
1 tablespoon sugar-free ketchup
2 teaspoons dried parsley
1 teaspoon salt
1 teaspoon black pepper
½ teaspoon yellow mustard
8 ounces sliced baby Bella mushrooms
3 ounces thinly sliced onion
2 cups beef broth
¼ cup water
3 tablespoons arrowroot powder
Chopped fresh parsley, for garnish
In a large bowl, combine the beef, Worcestershire sauce, ketchup, parsley, salt, pepper, and mustard. Make sure everything is evenly combined.
Shape the beef into four large oval patties, about ¼” thick. Place the patties into the pot. Place the patties into the pot. Place the mushrooms and onions on top of the patties. Add the broth to the pot.
Close the lid and seal the vent. Cook on HIGH pressure for 1 minutes. Quick release the steam. Press CANCEL.
Remove the patties, mushrooms, and onions with a slotted spoon or spatula.
Make a slurry by whisking together the water and arrowroot in a small measuring cup.
Turn the pot to SAUTÉ mode. When the broth comes to a low boil, whisk in the slurry. Continue whisking until a gravy has formed., 5 to 10 minutes. Pour the gravy over the patties.
Garnish with parsley before serving.
