Spring is here and the mint is growing wild so it’s time for a yummy cocktail! I like this version, because it makes an non alcoholic version which we love, since my son likes to pretend we are at happy hour.

Mint Juleps
(Adapted from The Unofficial Disney Parks Cookbook by Ashley Craft)

For Mint Syrup
1 cup granulated sugar
1 cup room-temperature water
1 tablespoon mint extract

In a medium microwave-safe bowl, combine sugar, water, and mint extract. Microwave on high1 minute, stir, then microwave 1 minute more. Store, cover, and refrigerate at least 1 hour.

For Juleps

1 cup lemonade
1 cup club soda
4 tablespoons Mint Syrup
4 maraschino cherries
2 fresh mint leaves

For each Julep, fill a highball glass with ice. Pour ½ cup lemonade and ½ cup club soda over ice. Add 2 tablespoons of Mint Syrup and stir. (Reserve remaining syrup for another use. Stir in an airtight container in the refrigerator for up to 2 weeks.)

Skewer 2 cherries and 1 mint leaf with a toothpick to garnish each drink.
