Here is one of those recipes that gets a split vote in our house. I enjoyed it, but the boys said no thank you lol. It’s a super quick and easy meal to prep ahead of time which I loved.
Poppy Seed Chicken
(Adapted from The Family-Friendly Keto Instant Pot Cookbook by Anna Hunley)
3 cups cooked chicken or roast chicken
1 cup homemade cream of chicken soup
½ cup sour cream
2 teaspoons poppy seeds
½ teaspoon garlic powder
½ teaspoon salt
½ cup water
¾ cup crushed pork rinds
1 tablespoon butter, melted
Heat the broiler.
In a medium bowl, combine the chicken, soup, sour cream, poppy seeds, garlic powder, and salt.
Transfer to the baking dish and cover tightly with aluminum foil.
Add the water to the pot. Place the baking dish on the trivet and carefully lower it into the pot.
Close the lid and seal the vent. Cook on HIGH pressure for 10 minutes. Quick release the steam.
Meanwhile, in a small bowl, mix the pork rinds and melted butter.
Remove the foil and spread the pork rinds on top of the casserole. Place under the broiler until crisp, about 5 minutes.
