You don’t always have to have a big meal for dinner. Sometimes with our busy life we like to just do a salad. This is one of my go to recipes. It’s not only quick and easy, but the fried goat cheese really fills you up.

I like to make my own fried goat cheese. I just spend a day prepping things such as this. I buy a couple logs of goat cheese then slice them, dip in egg wash and then roll in crushed Ritz cracker crumbs. I place them on a cookie sheet and freeze them. Once they are firm I put them all in a freezer safe bag and wham I have goat cheese ready to be cooked when I need it. You can air fry them, pan fry them or bake them. Kroger has them as well from the Pioneer Woman, but I prefer making them myself. You could even use the flavored goat cheeses to compliment your salads.

Cranberry Spinach Salad with Cashews and Goat Cheese and Poppy Seed Dressing

4 oz baby spinach
1/2 cup cashews roasted
1/4 cup dried cranberries
2 oz goat cheese
poppy seed dressing

In a salad bowl, combine baby spinach, cashews, and cranberries.

Pour the salad dressing over the salad, and mix. Do not add all of the salad dressing at once – add just enough to coat the salad to your taste. Top with crumbled goat cheese.
