I’ve been itching to try a chaffle that I’ve seen all over pinterest used in Keto recipes. I finally got my chance. My neighbor gave us a mini waffle maker and these make the perfect chaffles! I know you are wondering what the heck is a chaffle? Basically it’s a cheese waffle. Most are just egg and cheese and then you branch off adding seasonings etc. I think the addition of almond flour gave it more of a bread texture. You do need to follow the directions. Adding the extra sprinkle of cheese makes a difference and gives it that crispy bite like a pizza. Also letting it cool a little before adding all the toppings I put on a paper towel, but next time I would probably use a cookie sheet to help it cool. These taste JUST LIKE a pizza. I’ll be adding it into my rotation now that the boys gave it a thumbs up too and said it didn’t taste like a healthy recipe lol.
I did double the recipe and it makes 4 mini pizzas. We all had one and a salad and it was a filling lunch.
Keto Pizza Chaffles

1 egg
1 heaping tbsp almond flour
1/2 cup shredded mozzarella (plus more for topping)
1 tbsp grated parmesan
1/8 tsp Italian seasoning
1/8 tsp garlic powder
pizza toppings of your choice
Preheat your oven to 400 degrees and turn on your mini waffle maker.
In a small bowl, whisk the egg together and then combine with the rest of the ingredients.
Once your mini waffle maker is hot, sprinkle the griddle with a little shredded mozzarella.
Pour HALF of the batter in and then sprinkle with more cheese. Close the lid and cook until the automatic timer or light goes off; repeat for next waffle.
Place the chaffles on a baking sheet and allow them to cool for a few minutes (so that they don’t get soggy), and then spread with a low carb pizza sauce, shredded cheese and the toppings of your choice.
Bake for 3-4 minutes and then an additional minute or two with the broiler on to brown the cheese.
Sprinkle with a little more Italian seasoning and enjoy!
