My son has never really cared for desserts. Usually he’s happy with a Hershey kiss and calling it a day. With me making more stuff being home he’s growing to liking more desserts. This one was a huge hit with everyone and they didn’t know it was healthier than most stuff we test out. For the sweetener I used monk fruit which I’m a huge fan of. It’s always better knowing what ingredients are in your food than using package box mixes. Trust me this dessert won’t disappoint and I really like that it doesn’t make a lot. We had some leftover and ate it the next day and it still stayed nice and lava like!
Keto Lava Cake
(Adapted from Low Carb Spark)
4 tbsp cocoa powder
2 eggs
3 tbsp heavy whipping cream
3 tbsp sweetener erythritol
1 tsp vanilla extract
1/2 tsp baking powder
Preheat the oven to 350F°/180°C. Grease 2 ramekins with butter and set aside.
In a bowl combine the dry ingredients: cocoa powder, sweetener, baking powder.
In a separate bowl beat well the eggs with a fork. Add the heavy whipping cream, vanilla extract and mix again.
Add the egg mixture to the dry ingredients and combine together until you get a pourable consistency.
Bake for 12 minutes or until the top is set but still moist.
Turn out onto plates and serve hot!
