4th of July is this weekend. If you are looking for a yummy blue shot, look no further! I doubled the recipe and these little babies disappeared like hot cakes. I really like that there is booze in them, but they aren’t super strong. The flavors all really work well together too.Stay safe this weekend and be sure to social distance!

Blue Hawaiian Jello

1 3-ounce package Berry Blue Jello (the small box)
1 cup boiling water (if you want extra tropical flavor, you can substitute pineapple juice for the water)
1/2 cup coconut rum (I used Malibu rum)
1/4 cup Blue Curacao
1/4 cup pineapple juice

Pour the jello into the mixing bowl

Add 1 cup of boiling water and stir until the crystals are all dissolved.

Mix in the Malibu coconut rum, Blue Curacao, and pineapple juice.

Pour the mixture into the jello shot cups

Chill in the refrigerator for 2 to 4 hours until set.

Notes
I like to use a mixing bowl with a spout*. It helps to prevent spills when you’re pouring the jello into the shot cups.

Spreading out the jello shot cups* on a cookie sheet makes them easy to move into the fridge for chilling.

Serving your jello shots with mini tasting spoons* gives people who don’t want to down them the traditional way another option.
