It’s definitely feeling like Summer here in Texas. This cocktail will have you feeling like you are able to travel and sitting on a beach in some tropical location in no time! Since it’s a little heavier I think one or two tops as a pre-dinner happy hour drink works just right. For a party it would be super easy to whip up a pitcher full and just add cherries as you fill glasses.

Coconut Mai Tai
(Adapted from Restless Chipotle)

2 ounces spiced rum
1 1/2 ounce coconut rum
1 ounce cream of coconut
2 ounces orange juice
2 ounces pineapple juice
1 teaspoon grenadine
1 Maraschino cherry
Ice

Add all of the ingredients except the cherry to a shaker with ice.

Shake until well blended.

Strain into a glass.

Add the cherry and ice if desired.
