Normally I’m not a gin fan, but we happened to be at a restaurant where the bartender swore he could change my mind with just one drink. Of course I called his bluff and 2 drinks later I seriously couldn’t get enough! I recently bought a bottle of color changing gin (that’s why my drink is a pretty purple color). We love this recipe and the I found adding a little more of the honey syrup cuts the harsh alcohol taste, but it’s all adjustable. I also love using fresh ingredients when I can so it’s worth squeezing lemons! It’s Spring time after all so channel your inner bee!

Bee’s Knees

2 ounces gin
3/4 ounces fresh lemon juice
3/4 ounces honey syrup

honey syrup (makes 1/2 cup)
1/4 cup honey
1/4 cup water

To make honey syrup, combine warm water and honey in a glass and stir until honey is fully dissolved. I usually heat water in a glass measuring cup in the microwave for 20-30 seconds and stir in honey.

Combine all ingredients in a cocktail shaker with a cup of ice. Shake vigorously for 10-15 seconds and strain into a chilled coupe glass.
