Instead of using a small cookie sheet I used an ice cream scoop. Come on, you know you would have done the same thing, might as well eat one large ball then sneaking 5 or 6 little ones haha.

I found these new sugar free chocolate chips from Hershey’s and since we don’t need any added sugar in this I thought I would give it a try. You really don’t notice that’s it’s sugar free so I am looking forward to using this product again.

Nutella Rice Krispie Balls

3 cups Rice Krispie cereal

5oz mini marshmallows

2 tbsp butter

1/2 cup Nutella

1/2 tsp vanilla extract

Dark chocolate candy melts or chocolate chips for dipping

Measure out the cereal into a large bowl and set aside.

In a large microwave-safe bowl, combine the marshmallows, butter, Nutella, and vanilla. Melt in the microwave for about 45 seconds, and mix until completely smooth.

Stir in the rice cereal until well combined.

Using a small cookie scoop to keep the balls the same size, start forming balls of the rice krispie mixture with your hands. You’ll find the cereal might be hard to roll, but just squeeze hard enough with your palms and they will eventually cooperate 🙂 Place rolled balls on a wax paper or parchment paper-lined cookie sheet and set aside.

Melt candy melts in the microwave in 30 second intervals, stirring thoroughly between each round, until chocolate is completely smooth. Dip each rice krispie ball in the chocolate and tap the handle of the spoon on the side of the bowl to help shake off any excess. Return the chocolate covered treat to the lined cookie sheet to allow the chocolate to set.

Sprinkle with crushed up rice cereal if desired.
