This was one of the cocktails I served over the weekend and it was a huge hit! I hate to buy watermelons because they are huge and it’s too much for the 2 of us so this was a nice solution to use up some of the watermelon we had leftover. Personally I think it might taste a little better with rum instead of tequila, but that’s just me I not a huge tequila person. One thing I really loved is I made 2 batches of this to fill a pitcher and stuck it in the fridge, which not having to blend the ice with it means that the cocktail won’t get watered down. The only thing I recommend doing is straining the mixture before serving it. As you can see from the pictures the unstained kind of separates in this frothy-ness stuff and isn’t texture pleasing in your mouth. I also blended it with the seeds so staining it also took them out. I loved the color of the drink! It’s defiantly going on my pool side cocktail menu for this summer!

Watermelon Margaritas
(Adapted from Cooking Light)

2 teaspoons sugar
1 lime wedge
3 1/2 cups cubed seeded watermelon
1/2 cup tequila
2 tablespoons sugar
3 tablespoons fresh lime juice
1 tablespoon Triple Sec (orange-flavored liqueur)
Lime wedges or watermelon balls (optional)

Place 2 teaspoons sugar in a saucer. Rub the rims of 6 glasses with 1 lime wedge; spin rim of each glass in sugar to coat. Set prepared glasses aside.

Combine watermelon and next 4 ingredients (through Triple Sec) in a blender; process until smooth.

Fill each prepared glass with 1/2 cup crushed ice. Add 1/2 cup margarita to each glass. Garnish with lime wedges or melon balls, if desired.
