Meatloaf is one of those comfort foods you more than likely grew up eating. It’s an easy dinner to prepare ahead of time and bake it so it’s hot and fresh on the table. I tried a new version of it that incorporates a Mexican twist. Overall it was good, but the green chilies made a lot of extra liquid combined with the grease of the meat I had to remove it from the loaf pan and place it on a cookie drying rack to drain before eating.

Mexican Meatloaf with Salsa

2 pounds Ground Beef
2 eggs
1 (4oz) can of Green Chiles
3/4 Cups Salsa
2 cloves garlic, minced
2 tablespoons Taco Seasoning
2 cups of Cheese

Preheat oven to 375 F.

In a large bowl, mix the ground beef, eggs, garlic and taco seasoning together.

On a piece of wax paper, place meat mixture in the middle and form a rectangle.

Sprinkle with the can of green chiles and half of the cheese.

Slowly roll the meat into a loaf (like pictured). Carefully lift and place in a loaf dish.

Spread salsa evenly overtop and bake for 50 minutes.

Remove from oven, sprinkle with the rest of the cheese and bake an additional 8-10 minutes, until cheese is melted.

Remove and garnish with your favorites! We love: cilantro, ranch, avocado and diced tomatoes.
