This recipe is packed with flavor and easy to prep ahead of time and pop in the oven or air fryer when you are ready for dinner! I served them with some dumplings and jalapeno cheese wontons. Overall they where a hit with my family and my son requested making them as a burger next time.
Thai Beef Rissoles
(Adapted from Peter’s Food Adventures)
(1 lb) lean ground beef
1 small onion grated (¼ cup)
1 carrot grated
½ small red capsicum grated (¼ cup)
2 cloves garlic minced
2 tablespoons ginger grated
1 lime zested and squeezed for juice
¼ cup fresh coriander finely chopped
2 tablespoons fresh Thai basil finely chopped
1 egg
½ cup bread crumbs
oil for frying
Sauces
1 tablespoons fish sauce
1 tablespoons light soy sauce
¼ cup Thai Sweet Chilli Sauce
Using a box grater, grate onion, red capsicum and carrots.
Place all ingredients (including sauces) in a bowl and mix together using your hands.

Take ¼ cup of meat mixture and firmly shape into a round meatball. Press to flatten into a rissole (about ⅔” thick). Leave indent with your thumb on one side of the patty for it to maintain shape while cooking.

Heat skillet with oil, and fry rissoles for 3-4 minutes per side until cooked through. I air fried mine at 375 degrees F for 10 minutes.

Serve with Sweet Thai Chili Sauce, garnish with coriander.
