Chicken thighs are something I didn’t really cook a lot with until my husband requested them. They taste amazing grilled and I’ve really grown to love cooking them. This slow cooker recipe came out really good. I only wish I would have lightly grilled the chicken to give it an added layer of flavor, but I have to say that it came out pretty good.
Slow Cooker Chicken Thighs
(Adapted from delish)
tbsp. extra-virgin olive oil
6 bone-in or boneless chicken thighs
salt
Freshly ground black pepper
120 ml (½ cup) low-salt soy sauce
100 g (½ cup) ketchup
85 g (¼ cup) honey
3 cloves garlic, crushed
2 tsp. freshly crushed ginger
2 tbsp. Sriracha
Juice of 1 lime
Cooked rice, for serving
In a large pan over medium-high heat, heat oil. Season chicken thighs with salt and pepper and sear until golden, 3 minutes per side. Transfer to a slow cooker.


In a small bowl, whisk together soy sauce, ketchup, honey, garlic, ginger, Sriracha, and lime juice. Pour sauce over chicken and toss until coated.


Cover and cook on low for 5 to 6 hours, or on high for 2 hours, until no longer pink.

Serve over rice.
