I love salads for lunch and dinner. This salad packs a flavor pack. It’s spicy, but easily toned down with ranch dressing. You can mix it all together and serve it as a bowl or have the chicken on the side. I used a bag of pre-cooked chicken, but you can easily use grill chicken or friend chicken.
Honey Hot Chicken Salad
(Adapted from Whipped it up)
2 Chicken Breasts, cooked and diced
¼ cup Honey Garlic Sauce
¼ cup Hot Sauce
2 heads of Romaine Lettuce, chopped and washed
3-6 Tablespoons Ranch Dressing, or any dressing of choice
½ medium Red Onion, diced
1 large Red Bell Pepper, diced
½ Cucumber, diced
Cheese, shredded (optional)
In a small bowl add cooked and diced chicken, the honey garlic sauce, and hot sauce. Toss to fully combine.
In a separate large bowl toss the chopped romaine with your choice of dressing.
Transfer the salad to two large plates or bowls. Top with red onions, bell pepper, cucumber, cheese (optional), and the Honey Hot Chicken.
Serve immediately.
