Summer is here and I love having watermelon on hand. It’s refreshing and you can do so many things with it. I recently played around with a couple ideas I had using leftover ingredients I had on hand. We really enjoyed this combo and you could really use any cheese you want with it.
Watermelon Brie Bites

1/2 of small watermelon cut into small slices
1/2 cup arugula leaves
1/2 brie wheel rind removed
On a serving tray, layer watermelon slices, arugula and sliced brie. Drizzle with balsamic vinegar glaze before serving.
*Note – If you can not find the balsamic glaze reduction in the store you can make some by combining 1/2 cup balsamic vinegar and 3 Tbsp sugar in a saucepan until it reaches a syrup consistency.
