I’m one of those odd people that love grocery shopping. I also love getting a good deal and with the rise of prices I do more bulk buying. One of my favorite places to go is Restaurant Depot. The issue with shopping at a larger bulk item store is I had to make 3 times the recipe to use the can of clams I bought! No complaints, because this recipe freezes well and taste amazing!
I have not had this clam chowder at Disney, but after tasting this recipe I can’t wait to see if it taste the same!
Clam Chowder
(Adapted from The unofficial Disney Parks Cookbook by Ashley Craft)
⅓ cup cold salted butter
⅓ cup all-purpose flour
2 tablespoons vegetable oil
2 large yellow potatoes, peeled and diced
1 medium white onion, peeled and diced
2 medium stalks celery, trimmed and diced
1 cup clam juice
1 ½ cups heavy cream
2 (8 ounce) cans chopped clams in juice
1 teaspoon ground thyme
½ teaspoon salt
⅛ teaspoon ground white pepper
In a small saucepan over medium heat, melt butter, then mix in flour. Continue to cook, stirring frequently, 5 minutes. Remove from heat and set aside.
In a large pot over medium heat, add oil and heat for 30 seconds. Then add potatoes , onion, and celery. Cook for about 10 minutes, until the onion is translucent.
Add clam juice, cream, canned clams including juice, thyme, salt, white pepper, and butter mixture. Stir to combine and bring to a boil. Reduce heat to a simmer and cook for 5 minutes, until potatoes are soft.
Store leftovers in an airtight container in the refrigerator for up to 3 days.
