Happy New Year’s Eve!! Thank you for following along with my kitchen for another year. I hope you all have a wonderful evening and I would love to hear your resolutions.
This is a quick and easy breakfast for a crowd. I prepped it all ahead of time then made it Christmas morning. I didn’t precook the eggs slightly like suggested, so I added 2 more eggs to make it thicker. If you do this method you’ll need to cook the dish for 20-25 minutes instead of 10-12 minutes. You’ll also need seasoning this needed a lot and I also topped with salsa to help.
Baked Tater Tots With Cheese, Bacon & Eggs
(Adapted from feed feed)
1 lb frozen tater tots
3 slices bacon, chopped
1/2 cup shredded cheddar cheese
1/2 cup Monterey Jack cheese
1 tbsp chopped chives
Salt and pepper to taste
Preheat the oven to 400F.
In a cast iron pan, cook chopped bacon until lightly browned.
Transfer bacon to a plate and discard some of the fat except for 1 tbsp.
Add tater tots to the pan and toss to coat in bacon fat.
Bake for 15 mins or until the tots are brown and crispy.
Remove the pan from the oven and lower the heat to 375F.
Make three nests in the pan, crack in eggs, top with bacon and cheese.
Return the pan to the oven and bake for another 10-12 mins or until the egg whites are just set.
Sprinkle with chopped chives, salt and pepper to taste.
