I love love loved this recipe. It’s super easy to toss together and bake when you are ready. I sprinkled in a cayenne add a little kick with the sweetness of the corn bread mix.
Zucchini Casserole
(Adapted from Ohio Farm and Bureau)
4 cups unpeeled
1/4 cup chopped onion
1 small box cornbread mix
1/2 teaspoon salt
1 egg
1 cup grated cheddar cheese
Preheat oven to 325 degrees. Combine all ingredients (less 1/2 cup cheddar cheese) and stir well.
Pour into a greased 8-inch pan. Bake for 45 minutes.
Sprinkle the second 1/2 cup grated cheddar cheese on top and bake an additional 15 minutes.
