I’m not a huge breakfast person, but I love it on the weekends. I’ve been trying to be better about making something during the week. a half a bagel can fill me up through lunch so I like these lighter chaffles. I see why they are a huge hit with people. So easy to adjust flavors and make something you have in your routine taste different every day without being stuck with the never ending bag. I thought these where even better once they cooled. They seemed to firm up and be more like a toasted bagel. I might try this recipe to use it as a breakfast sandwich bread next time.

Everything Bagel Chaffles

1 egg
1 tbsp almond flour
3/4 cup shredded mozzarella cheese (plus more for the griddle)
1 tsp Everything Bagel seasoning (plus more for topping)
cream cheese (for topping)

Preheat your mini waffle maker.

Mix the egg, almond flour, cheese and bagel seasoning together in a small bowl until well combined.

Once the waffle maker is hot, sprinkle a little shredded cheese directly onto the griddle and then pour HALF of your batter in. Sprinkle with more cheese and close the lid.

Cook until the automatic timer goes off or until it’s crispy to your liking; repeat for next chaffle.

Let the chaffles cool for about a minute and then spread with cream cheese and top with more bagel seasoning. Enjoy!
